Blueberry Zucchini Bread


  • I just tried this recipe recently with extra zucchini that I had. It tasted marvelous!! This bread is healthy and perfect for breakfast or a filling snack! Try it!

  • Blueberry Zucchini Bread
4 eggs whites whisked
  • 1 cup vegetable oil
  • 3 tsp almond or vanilla extract
  • 2 c stevia sweetener or 1 c apple sauce
  • 2 cups finely shredded zucchini
  • 3 cups almond or whole wheat flour
  • 1 tsp sea salt
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1 tbs cinnamon
  • 1 pint fresh blueberries
  • 1/2 c organic chocolate chips (optional)

  • Directions

  1. Preheat oven to 350 degrees.  grease 4 mini-loaf pans, or a muffin pan if you'd prefer muffins.
  2. In a large bowl, beat together the eggs, oil, vanilla, and sugar or applesauce. Mix in the zucchini.  Next add in the flour, salt, baking powder, baking soda, and cinnamon. Add in the blueberries. Pour mixture into the pans.
  3. Bake 50 minutes or until a fork inserted in the center of a loaf comes out clean.
  4.  Cool 20 minutes in pans then dump out the pans to cool the bread completley.

* Serve with ice cream or your favorite yogurt!
