Black Bean Sweet Potato Burritos

These are delicious!!! Sweet potatoes are jam-packed of vitamins and healthy carbs! Pair them with black beans, hummus and toss in a burrito.. YUM, you have the perfect summer lunch!!!

Black Bean Sweet Potato Burritos
2 cooked sweet potatos
1 red bell pepper
1 can low sodium black beans
1/2 c chopped cilantro
1/2 c brown rice
3 whole wheat torillas
1 c spinach
1/4 c hummus
1 c cheese of your choice
1 c salsa  ( optional)

Cook the sweet potatoes in a skillet or dice and cook in the microwave until tender, mix potatos with the other ingredients. Spread hummus on the tortillas, fill with mixture and add salsa and cheese. Roll up the burrito and broil for about 2-3 minutes until lightly browned, ENJOY!!!
