When Breakfast Gets Fancy


Stuffed Green Peppers with Wild Rice

2 green peppers
6 egg whites
1/4 c spinach
1/2 c turkey burger or tempeh
2 cups brown rice
1 can black beans
1tbs hummus
2 slices whole wheat bread
2 tbs salsa
2 tbs cheese

Cook turkey burger or tempeh in a skillet with 1 tbs olive oil, meanwhile bake peppers in the oven until slightly tender. Add egg whites to the skillet along with spinach. Cook rice in a pan and add beans once the rice is done. When egg mixture is finished stuff it in to the peppers, top with cheese. Add hummus to sliced bread and top with cheese and toast. There you have it! A fancy breakfast! Top rice with salsa for some extra flavor!

secret is that if you must feel comfortable and excited about what you are wearing!
Allow your confidence to shine. Believe it or not, even major celebrities sometimes
need a confidence boost. They know that confidence is all about wearing things that
flatter your body and make you feel great! Fashion allows you to showcase your
style and express yourself through your clothing and accessories. Whether you
spent 2 hours or 10 minutes getting ready, you should always look effortless as if
you just "threw something together.

One of my favorite looks for fall is the must-have maxi skirt. There are so many
styles, textures, and patterns out there, but the maxi really is a universally flattering
style that works on all body types and can be dressed up or down in a matter of
minutes! A huge myth is that you have to be tall to pull off this style...so not true! If
you are petite, wear your maxi skirt with fall heel booties or wedge boot.

A pleated maxi skirt is all you need—add a super thin cardigan or wrap to throw over
a denim shirt and you will be ready for any fall event. Remember when picking your
skirt to think about what will be most versatile in your closet. If you tend to wear a lot
of black and neutrals, scout out a maxi skirt in pale colors for fall and pair with a
cream cardigan. If you are bold and want to get noticed, find a maxi skirt in a bright
floral print and pair with a thin solid oversized knit sweater for the perfect
combination.

Don't be scared of accessorizing. Wearing the perfect pair of shoes and the right
accessories are the key components to a head to toe styled look! Pick either a
statement necklace OR chunky earrings or hoops to accent your look. Bangle
bracelets go with both, just make sure to keep all your metals in the same family. If
you really aren't into jewelry, layer a lightweight scarf loosely tied around your neck.
If your skirt is a pattern, choose a solid scarf in a complimentary color, and if your
skirt is solid have fun with a patterned scarf. The best thing about accessorizing is
that you are sure to get compliments- which is why we dress up anyways, right?

So go get your fall style on- find a maxi skirt, booties and accessories to step out in
this fall exuding confidence and being excited for your new look! You will turn heads
and become the stunning fall fashionista that you are!

Yesterday really felt like fall, however; in the sun it was really warm! I wanted to feel comfortable and look stylish with a simple look for my lunch date! This outfit shows fashion can be affordable and comfortable!


After lunch I found this blue, silk, Oscar De La Renta blouse for only $2 at Urban Renewal!!! I love thrifting, it is amazing what you can come across with a keen eye and a little patience!

GARDEN BREAKFAST

Whats better or fresher than a breakfast that you grow from your own garden? I can't think of many other options. When I visited home I was able to prepare amazing meals with ingredients that were in my own back yard! Trust me, I miss that luxury being back in the city =(. If your like me and trapped in a city, getting fresh veggies from Trader Joes, Whole foods or a farmers market works just as well for these two recipes! ENJOY!


Open Faced Omelet with roasted sweet potatoes and carrots

Ingredients

4 egg whites
1/2 diced red pepper
1 small sweet potato diced
2 large carrots chopped
1/4 c spinach
2 tbs olive oil
2 tbs goat cheese

Crack egg whites in a skillet with with 1tbs olive oil, Let cook until edges start to get firm, top with spinach, peppers, goat cheese and spices and cover with a lid until cooked all the way through. While thats being cooked, place the diced sweet potato and carrots on a baking sheet and drizzle with olive oil, broil on low/med for about 20 minutes or until veggies are tender! ( I topped mine with my garden salsa below)!


 

Black Bean Garden Salsa

Ingredients

2 cans low sodium black beans
5 diced ripe tomatoes ( or canned)
1 diced red onion
2 c diced cilantro
2 diced jalepeno's
1 minced garlic clove
1 c corn (optional)
1 diced green pepper
1 tbs cinnamon
1 tbs black pepper
1 tbs garlic powder
add sea salt to taste

*Mix all ingredients together and serve with chips, veggies, in pitas, on omelets or basically anything!
