Grilled Chicken for LUNCH!

Who wants a simple, yummy lunch today!! Here is my great recipe for a healthy lunch thats full of protein and healthy vegetables!

Chicken with Mashed carrots and Chopped Brussel Sprouts


1 C boiled carrots
1 grilled chicken breast
2 tbs olive oil
1 dash cinnamon
1/2 c almond milk
herbs of your choice
1/2 c Brussel Sprouts
1/3 c salsa (optional)

Grill the chicken breast in a pan with 1 tbs olive oil, mean while boil the carrots until tender, Once tender mash with a fork in a bowl and add almond milk, cinnamon and spices of your choice. Once chicken is done add the Brussel sprouts to the pan with 1 tbs olive oil and sauté until they become lightly browned and crispy. Place on a dish and serve!! Its that easy! Feel free to top the chicken with salsa! yum!
