When Breakfast Gets Fancy


Stuffed Green Peppers with Wild Rice

2 green peppers
6 egg whites
1/4 c spinach
1/2 c turkey burger or tempeh
2 cups brown rice
1 can black beans
1tbs hummus
2 slices whole wheat bread
2 tbs salsa
2 tbs cheese

Cook turkey burger or tempeh in a skillet with 1 tbs olive oil, meanwhile bake peppers in the oven until slightly tender. Add egg whites to the skillet along with spinach. Cook rice in a pan and add beans once the rice is done. When egg mixture is finished stuff it in to the peppers, top with cheese. Add hummus to sliced bread and top with cheese and toast. There you have it! A fancy breakfast! Top rice with salsa for some extra flavor!

Mocha Coffee Deliciousness

Coffee or green tea has become a necessity to start off the average humans day. With my mocha coffee smoothie recipe, your day will not only get the boost it needs but if your an athlete or like to stay fit, it will also replenish lost nutrients and minerals lost during morning exercise! 

Mocha Coffee Smoothie

Healthy with an energy boost!

1-2 c iced coffee ( I brew my coffee before I got to bed and refrigerate it over night)
1 tbs unsweetend cocoa powder 
1 scoop chocolate or vanilla whey protein powder
1/3 c almond mink
1 tbs Better n Butter or Natural PB
1-2 drops stevia sweetener (optional)
1/2 frozen banana 
1/4 c oats

* Blend all ingredients together until smooth and enjoy!!

Strawberry Protein Crepe PANCAKES

These pancakes look more like a crepe but taste more like a pancake. They are filled with a yummy yogurt filling that can easily make this breakfast meal feel like your eating dessert! Treat yourself and try this morning delight!


Strawberry Protein Crepe Pancakes
1 scoop vanilla whey powder
2 egg whites
1/4 c n/f greek yogurt
1/2 c oats
1/4 c strawberries
1 packet of stevia 
1 tsp cinnamon
1/8 c almond milk or water

Yogurt filling
1/2 c yogurt
1/3 c natural strawberry jam 
1 tsp honey

Blend Pancake ingredients in a blender and spoon out onto a sprayed skillet on medium heat. Heat each side until golden brown and flip once edges bubble. Once pancakes are finished, mix filling ingredients and place in the middle of the pancakes and roll up, secure with a tooth pick or place folded side downward. ENJOY!!
