Chicken Stir-fry Salad

I love stir-fry, I love salad. Why not eat a stir-fry salad!? 

Chicken Stir-fry Salad

1 sliced chicken breast ( you can use tofu or steak as well)
1/2 sliced zucchini
6 sliced cherry tomatoes
1tbs olive oil
1 c spinach
1/2 sliced red pepper
1/2 sliced green pepper
diced mushrooms
1 tsp cinnamon
1 tsp cayenne pepper
1 tsp pepper

* Place olive oil in a skillet and cook chicken until it is tender and well done. Next add all the veggies except the spinach and grill them until they are tender and look delicious! Add any seasonings of your choosing and place the mix on a bed of spinach. Serve with hummus or a sale dressing of your choice!
