Super Green Salad


This salad is very healthy, very good and very easy to make! Lately I have been making a large amount and storing it in the fridge, so I have a meal all ready made thats delicious and convenient. This salad is full of vitamins and healthy fats that your body loves. It is also, gluten free, Paleo, and vegetarian.

Super Green Salad

1/4 c spinach 
2 c romaine lettuce chopped
1/2 chopped green pepper
1/2 chopped red apple
1/4 c chopped red onion 
1/4 c walnuts
3 slices of avocado
1/2 c chopped broccoli
5 asparagus stalks chopped
1 /2 sliced cucumber
1tbs olive oil
lemon juice

Place broccoli, asparagus and the onion in a small skillet and sauté with 1 tbs of olive oil until veggies are slightly tender. Add all the other ingredients in a bowl and top with the sautéed veggies. I added freshly squeezed lemon juice and pepper to mine.

Vegetarian Taco Bake

I just made this for dinner tonight..it was AMAZING!! I created this recipe with basically what ever we had in our cabinets. It's simple, healthy and very cheesy! 

Vegetarian Taco Bake
1 can chickpeas
1 can pinto beans
1 can black beans
3 c Quinoa
1 green bell pepper diced
1 tomato diced
1 red onion diced
1 package soy burger or sausage
1 packet organic taco seasoning
3 c organic cheddar cheese shredded
1 c spinach
5 taco shells crushed
1 can black olives
2 c red sauce, salsa or crushed tomatoes
1 mashed avocado

Preheat oven for 350 degrees. Spray a 13 x 9 baking dish with olive oil spray. (You can also cut this recipe in half, I was feeding a lot of people) use a 9x9 dish if you do so. First layer quinoa on the bottom of the dish and add 2 c of water. Next add the beans and a layer of cheese. Then top the cheese with the cooked soy burger seasoning and vegetables and layer with cheese. Add the olives, mashed avocado, spinach and red sauce and top with more cheese and crushed taco shells. Cover with foil and place in the oven for 45 minutes! let cool for about 10 minutes then serve!

* add yogurt or sour cream and make it spicy with cayenne pepper or jalapeños!
