Baked Apple Quinoa


THIS IS DELICIOUS!

Baked Apple Quinoa 
1 c quinoa
1/4 c almond milk
1/3 c apple cider 
1tbs cinnamon
2 stevia packets
1 diced honey crisp apple
1/4 c walnuts or sliced almonds
1 tbs cocoa powder (optional, I like chocolate everything)
2 tbs PB2, or natural peanut butter (optional)
1 egg white
1 tsp baking soda

* Mix all ingredients in a bowl then pour mixture into a baking dish don't forget to spray the dish or you'll be angry, bake at 350 degrees or until apples are soft and the quinoa resembles rice pudding. Serve with peanut butter on top or choose to go a lil unhealthy and top it with some pumpkin ice cream!

Vegan? No problem, don't add the egg white, add 2 tbs of apple sauce instead!

  1. Is the quinoa supposed to be cooked beforehand? Do you have an estimate of how long it should take to cook? Thanks!

    1. I should have mentioned the quinoa was already cooked...sorry! Boil 3/4 c quinoa in a pan until the quinoa sprouts open, it will look like rice. This usaully takes 15-20 mins. Then add all the ingredients from above.
