Memorial Day MEAL

With today being so nice outside I wanted to share this recipe I found! This recipe includes a side dish of watermelon salad and Black Bean Burgers! Its sure to cool you off on a hot summer day and most importantly it taste amazing!!

Watermelon Salad
Ingredients 
  • 3/4 C sliced red onion
  • 1 tbs lime juice
  • 1 C watermelon cubed
  • 1/3 C black olives
  • 1 cucumber sliced
  • 2 tbs olive oil
  • 1/2 cup feta cheese
  • 1 C mint leaves ground
Directions 
Mix all ingredients together and served in half of the cut up watermelon shell, and enjoy!!! 

Black Bean Burgers
Ingredients
  • 1/2c bread crumbs
  • 1 can black beans
  • 1/2 red onion sliced
  • 1/4 c cilantro
  • 1/2 finely diced green pepper
  • 1 egg or 2 egg whites
  • 1 tbs chili powder
  • 1tbs cumin
  • 1tbs cinnamon
  • 1 tsp chili sauce or hot sauce
  • 1 tbs BBQ or salsa
  • 3 garlic cloves peeled, diced

Directions
    1. If grilling, preheat an outdoor grill for high heat, and lightly oil a sheet of aluminum foil. If baking, preheat oven to 375 degrees and lightly oil a baking sheet.
    2. In a medium bowl, mash black beans with a fork until thick and pasty.
    3. finely chop bell pepper, onion, and garlic. Then stir into mashed beans.
    4. In a small bowl, stir together egg, chili powder, cumin, and chili sauce.
    5. Stir the egg mixture into the mashed beans. Mix in bread crumbs until the mixture is sticky and holds together. Divide mixture into four patties.
    6. If grilling, place patties on foil, and grill about 8 minutes on each side. If baking, place patties on 
    7. baking sheet, and bake about 10 minutes on each side


* Add your favorite vegetable and cheese, top with the bread of your choice and enjoy!!!!
